Quantitative risk assessment of Salmonella Enteritidis in shell eggs in Belgium

چکیده

A quantitative risk assessment of salmonellosis due to consumption of shell eggs contaminated with Salmonella Enteritidis (SE) in Belgium was carried out. The risk model was based on the World Health Organization (WHO)-template (World Health Organization, 2003) for SE in eggs and egg products. The results of the model are in the same order of magnitude as the epidemiological data available. Sensitivity analysis points at the environmental temperature as the main influencing factor in the annual number of salmonellosis cases. Mitigating strategies should therefore focus on temperature, rather than on keeping time.
